Hailed as “worth its weight in gold” by the South Florida Sun Sentinel, Shimuja Florida brings you authentic Japanese ramen with its 18-hour, 100% pork-bone, house made ramen broth along with other traditional Japanese rice dishes like Gyu Don and Curry Rice. Our menu features 11 types of ramen dishes with options for vegetarians and is perfectly complemented by classic Japanese appetizers, loved by all. Highlights include gyoza and a variety of buns and simple standouts like house-made cucumber pickles and karaage fried chicken. Rounding out our traditional menu are delicious desserts including Taiyaki Ice Cream Waffle, Daifuki and delicate Japanese Mille Cake and a superb selection of Japanese sake, beer and wine.

Shimuja Florida is the brainchild of Japanese-born chef Keiichi Maemura and managing partner Yoko Takarada of the iconic Toni’s Sushi in Miami Beach and nine-year-old Shokudo in Buena Vista.

In 2008, Chef Maemura left a career in finance on the southwestern island of Kyushu, Japan to work in a ramen restaurant after developing an obsession for the bold and flavorful authentic Japanese dish. He went on to work for one of the country’s popular chain Ramen restaurants where he honed the meticulous craft of simmering homemade 18-hour pork-bone broth, the key differentiator to his legendary ramen and opened two Shimuja locations in Japan before heading to South Florida to open in Davie. Maemura also operates Hayato at 1-800-LUCKY market in Miami’s Wynwood arts district.
